I have stripped out the two wires from and old lawn mower power cable and I have another couple of power cables also available to strip out. Would these wires be suitable for my new layouts bus circuits please?
If not what else could I use them for?

I assume you mean a DCC bus pair? If so possibly? It really depends on the size of your layout.
The size of the wires may be marked on the outer sheath of the cable along with other details. e.g. 1.0mm2 or 0.75mm2
You're really looking for something around a minimum of 1.0mm2 and larger if possible and defiantly larger wire size where a layout is large. (IMO a small layout is up to 4ft x 8ft, Medium around 8ft x 12ft and over that consider it as large).

An interesting point there is a rough idea as to what small, medium and large is.
I will start a new thread not to take this off topic... :)

My cable wouldn't be long enough because I keep running over it

Hedge trimmers are a good source of cut to length cables.

Unfortunately they are getting harder to source as my neighbours are now buying petrol-mowers. :D
.
Do you want some Colin. I’ve just removed 20 feet or so from my now defunct mower. :D
