I recently found some thin shieded cable, I think from an old games controller and as I rarely throw things away wondered if it would make a good connection from pick up to motor.

I realise it isn't really necessary but thought I might as well use it. I know its main use is to prevent EMI but wondered if anyone else has used it and if so what for?

I have never used any shielded cables on a model railway. Twisted pairs is about all that's necessary where data is concerned (DCC etc). You could strip out the insulated cores and use them for motor feeding, but that would depend on the current carrying capacity of the wires and what the motor draws at maximum.
